Dr. DiNezza’s passion for functional medicine and path to healing had an unlikely beginning. Her chronic low back pain prompted her to enroll in chiropractic school to find answers- something no doctor body worker had been able to do for her in five years. While attending a class about the thyroid and the immune system with Datis Kharrazian she realized that this was a critically important (and overlooked) part of her mother’s thyroid care. What started as a quest to help her mom soon became a way for the doctor-to-be help herself. After an elimination diet and food sensitivity testing, Nicole discovered the cause of her chronic pain- gluten. Finally, she had answers (and relief)! 

Dr. DiNezza is now the owner and physician at Infinity Holistic Healthcare in Chapel Hill, North Carolina. In addition to her DC degree, she has gone on to pursue many hours of study in functional and integrative medicine, as well as earn her Nutritional Therapy Practitioner (NTP) certification. At her office in Chapel Hill, Dr. DiNezza frequently helps those with autoimmune diseases and digestive complaints, among other complex cases. 


When she is not at the office, you will likely find Dr. DiNezza with her 6 month old daughter, husband and beagles. In her spare time Nicole enjoys rowing, kayaking, cooking and doing arts and crafts. 


Jennifer Cuevas 

The Gluten & Grain Free Gourmet supports delicious eating that is gluten, grain, soy, and poultry free. Jen Cuevas experienced her own journey to wellness by eating this way, and desires to share the message that life can still be delicious! 


Just a few short years ago, Jen was ill with a multitude of issues (although not typical “Celiac” symptoms), including high cholesterol, pre-diabetes, sudden weight gain [over 60 pounds], Hashimoto’s, and arthritis (read more of her story here). After more than seven frustrating visits with various doctors, she finally learned about her gluten sensitivity and Celiac disease. In becoming well, she found that life without gluten was really great from a health perspective, but affected everything else that had a social factor. 
In the time since her diagnosis, Jen has spent a lot of time learning. She was treated by Dr. Glen Aukerman (author: Better Health in 120 days) and attended all of his classes to understand the medical aspect of how various foods affect gluten sensitivity. After further health issues inspired her to do more research, Jen went completely grain and soy free in 2012, and became a certified coach under the direction of Gluten Free Society. She uses her own health journey to coach and inspire others to consider dietary changes as a way to achieve optimum health. In 2013 she established a support group, and found that food availability continued to be the biggest barrier to success. She began developing food products that support a grain-free, soy-free and even dairy-free lifestyle; many items are allergy-friendly and are free of refined sugars. She also offers allergen-free Communion to churches, raising awareness about the effects of gluten exposure. 



After working for 20 years in the corporate world, Tarah Jakubiak founded Allergic Traveler. Jakubiak, president of Allergic Traveler has traveled the world since the age of two. She has been to 22 countries and 25 states. Jakubiak has been to all inclusives, gone on cruises, gone camping; backpacking through Europe, gone to the big cities, and little hidden gems. She has multiple food allergies but it does not stop her from seeing the world. Jakubiak is allergic to eggs, nuts, mushroom, soy, garlic, corn, sesame, potatoes, celery, shellfish, chicken, pork, peanuts, and many fruits. She is originally from Montreal, Quebec and now lives in Greensboro, NC with her husband.

Meg Huebner 

Meg Huebner is an independent food scientist and researcher with a background in organic chemistry, nutrition, and food history, and has been living gluten-free since 2007. She started the blog Gluten-Free Boulangerie in 2010 to create and share GF breads delicious enough for everyone to enjoy. However, she soon began to wonder whether aiming to replicate wheat through the use of gums, highly-processed ingredients, eggs, and other common substitutes might actually be hindering, rather than helping, the quality of GF foods. On a more philosophical level, she also felt these ingredients were still standing in the way of truly “real bread.” 

Through continued research, Meg found that this “real bread” is indeed not only possible, but is also more delicious! She now develops whole-food-based recipes using techniques which bring out the natural structural and binding properties of GF ingredients. Some of these methods are new and experimental, while others are based on the diverse traditional uses of GF flours from around the world. She is currently working on a book which will explain the science of these ingredients and techniques in a way that is accessible to bakers from all backgrounds. 


Rodger Lenhardt is the owner and founder of Norm’s Farms, the American source of anti-oxidant rich elderberry super fruit products. He comes from an organic and sustainable perma-culture farming background.  Together with his wife Ann they started growing elderberries as a way to restore health a vigor to the family Farm. Norm's Farms family believes in the sustainable production of healing foods made with natural, simple ingredients just like the elderberries Norm's Farms grows. Because the Norm's Farms family recognizes that their small Missouri farm cannot keep up with the company's demand, they have begun working with small family farmers in North Carolina to help establish elderberry orchards and a partial Elderberry Farm. Norm’s Farms has a local source of elderberries for their products in addition to those grown in Missouri.

We strive to be your go-to-source for all things elderberries, including but not limited to all aspects of this amazing berry's history, uses, and potential for sustainable cultivation in North America.



Beth is a Certified Holistic Health Coach, board certified by the American Association of Drugless Practitioners, and received her training through the Institute for Integrative Nutrition. She focuses on helping people achieve optimal wellness through a whole body approach; emphasizing the importance of not only diet, but other factors such as: physical activity, personal relationships, career, emotional wellness, positive lifestyle and mindset and the use of natural therapies. 

Beth’s goal is to educate and empower people to make positive lifestyle choices that will lead to more energy, less stress and a stronger, happier body, mind and spirit.

Dr. Roosevelt J. Smith DC is originally from New York City area where he was born and raised. Following his graduation from Don Bosco Prep High school in Ramsey, New Jersey, Dr. Smith attended Bucknell University in Lewisburg PA. Shortly following his graduation from college Dr. Smith enrolled into Life University to earn his Doctorate in Chiropractic. Upon his graduation in 2000 Dr. Smith practiced in Michigan where he was an associate doctor at Health Quest chiropractic. After a years employment Dr. Smith accepted a position to become a clinic director for a chiropractic office in Greensboro, North Carolina. This allowed to him to become a contributing member of the Greensboro community for the last eleven years. His current office location was opened September 4, 2004 in Greensboro, North Carolina. He is married to his wonderful wife Kim, who not only supports the practice but works as the occupational therapist providing all the physical rehab in the office. Like all the Health 1st doctors, Dr. Smith constantly strives to provide all patients the latest and most advanced treatment methods available in chiropractic.

Dr. Clifton Mays has devoted two decades of practice to helping his patients improve their lives through the benefits of chiropractic care. Dr. Mays is a Colorado native, where he completed his undergraduate studies and moved to Atlanta, Georgia to receive his Doctorate of Chiropractic from Life University. While interning in Atlanta, Dr. Mays sought job opportunities in Northern Virginia, and in 1993 opened his first office in Fairfax, Virginia. After working a year in Fairfax, he relocated his office to nearby Chantilly, Virginia where he continued to practice until Dec. 2000. He then merged his office with a Chiropractor in Centreville, Virginia, where he practiced until Dec. 2002. His North Carolina office, was opened Feb. 9, 2002 in High Point, North Carolina. He is married to Debi, a nurse at Moses Cone Hospital. He has a daughter, Madison and has a pair of pure bred boxers. Since the modest beginning over a decade ago, Dr. Mays has seen thousands of people wanting to live healthier happier lives with his help and with Chiropractic.
